SOUTHERN PECAN PIE
3 eggs 2/3 cup sugar
Dash salt 1 cup dark corn syrup
1/3 cup butter, melted 1 cup pecan halves
Put eggs, sugar, salt, corn syrup and butter in blender and blend until thoroughly mixed. Cover bottom of unbaked 9" pie shell with the pecan halves and pour syrup mixture over the pecans. Bake at 350 degrees for 50 minutes or until knife inserted halfway between center and edge comes out clean.
MOCK APPLE PIE
Pastry for two-crust 9" pie
36 Ritz crackers coarsely broken (about 1 3/4 cups)
2 cups water 2 cups sugar
2 teaspoons cream of tartar 2 tablespoons lemon juice
2 tablespoons butter or margarine 1/2 teaspoon cinnamon
Place crackers in bottom of pie shell. In saucepan, over high heat, heat water, sugar and cream of tartar to a boil and simmer for 15 minutes. Add lemon juice. Cool. Pour syrup over crackers. Dot with butter. Place top crust over pie. Trim, seal and flute edges. Slit top crust to allow steam to escape. Bake at 425 degrees for 30-35 minutes or until crust is crisp and golden. Cool completely.
IMPOSSIBLE PIE
4 eggs 6 tablespoons butter
1/2 cup flour 1/2 teaspoon salt
2 cups milk 1 cup sugar
1 cup coconut 1 teaspoon vanilla
Put all ingredients in blender. Blend 2 minutes. Pour into 10-inch pie pan that has been sprayed with Pam. Bake at 350 degrees for 50 minutes or until knife inserted halfway between center and outer edge comes out clean. Good warm or cold.
PUMPKIN PIE
2 eggs, beaten 1 can (15 oz) pumpkin
1/2 cup sugar 1/2 cup brown sugar
1/2 teaspoon salt 1 teaspoon cinnamon
2/3 cup evaporated milk 1 unbaked 9-inch pie shell
Mix all ingredients in blender and blend for 2 minutes. Pour into pie shell and bake at 425 degrees for 15 minutes. Reduce oven temperature to 350 degrees and bake another 40-50 minutes or until knife inserted near center comes out clean.
APPLE CRUMB PIE
6-8 green apples, sliced 2/3 cup sugar
1/4 teaspoon salt 1/4 teaspoon cinnamon
1 tablespoon butter or margarine 1 unbaked 9" pie shell
Blend sugar, salt, cinnamon and butter. Toss apples in mixture and arrange in pie shell.
SUGAR CRUMB TOPPING:
3/4 cup firmly packed brown sugar 1/4 cup sugar
3/4 cup flour 1/4 teaspoon salt
1/2 cup butter or margarine
Blend sugars, flour, salt and butter. Spoon topping over apples. Bake at 425 degrees for 15 minutes. Reduce oven temperature to 350 degrees and bake another 35-40 minutes until lightly browned.
SWEDISH APPLE PIE
When you want a quick apple pie fresh from the oven, forget about the crust and try this simple recipe:
1 large egg, beaten 1/2 cup brown sugar
1/4 cup white sugar 1/2 cup flour
1 teaspoon baking powder 1/4 teaspoon salt
1 1/2 cup chopped apples 1/2 cup nuts
Mix sugars and egg. Add dry ingredients, and then stir in apples and nuts. Pour into a greased pie pan and bake at 350 degrees for 25 minutes. Cool and top with whipped cream or Cool Whip.
LAZY PEACH PIE
1/2 cup butter or margarine 1 cup sugar
1 cup flour 2 teaspoons baking powder
1/2 teaspoon salt 3/4 cup milk
1 qt (or one large can) peaches
Melt butter in 9 x 13 inch pan. Sift together sugar, flour, baking powder and salt. Mix sifted mixture with milk and pour over melted butter. Pour one quart or one large can peaches (undrained) over batter. Bake at 350 degrees for one hour or until lightly browned.
EASY NO-ROLL PASTRY SHELL
1 1/2 cups flour 1/2 cup salad oil
1 1/2 teaspoon sugar 2 tablespoons milk
3/4 teaspoon salt
Combine flour, sugar, and salt in a bowl. Mix with a spoon. Beat oil and milk together with a fork; mix into flour mixture until evenly dampened. Press with fingers in even layer over bottom, up sides, and partially over rim of pie plate. Flute edges. If baking empty shell, prick with fork and bake at 450 degrees for 10 minutes or until golden.
MAGIC PEACH COBBLER
1 stick butter 1 1/2 teaspoon baking powder
1/2 cup sugar 2 cups peaches
1 cup flour or Bisquick 1/2 cup sugar
3/4 cup milk
Melt butter in 8 x 8 x 2 inch pan. In bowl, mix together 1/2 cup sugar, flour, baking powder, and milk; pour over butter. DO NOT STIR. Arrange fruit over the batter, and then sprinkle with 1/2 cup sugar. Bake for 30 to 40 minutes at 350 degrees or until batter rises to the top, forms a crust, and is firm.
APPLE PIZZA
1 loaf frozen bread dough, thawed 1/2 cup sugar
5 or 6 apples, peeled and sliced 1 teaspoon cinnamon
1/2 cup butter 1/2 cup flour
1 cup powdered sugar 2 tablespoons warm water
Thaw bread dough completely but do not let rise. Spread dough on 12-inch pizza pan. Arrange sliced apples on dough. Mix together the flour, sugar, cinnamon and butter until the mixture is crumbly. Sprinkle mixture over apples. Bake at 350 degrees for 30-35 minutes or until crust is brown. Mix powdered sugar and warm water together to make a glaze and then drizzle over warm pizza.
NO-CRUST PIE (SWEDISH APPLE PIE)
1 large egg, broken 1/2 cup brown sugar
1/4 cup white sugar 1/2 cup flour
1 teaspoon baking powder 1/4 teaspoon salt
1 1/2 cups chopped apples 1/2 cup nuts
Mix sugars and egg. Add sifted dry ingredients, then stir in apples and nuts. Pour into greased pie pan and bake at 350 degrees for 25 minutes. Cool. Top with whipped cream (if desired).
